Although I’ve played untold amounts of this game not sure on this one, so when the symbols x2 and double the win if you have 2 x2 does it still only count as 1 double ?

It’s just x2, no matter how many x2 combinations that you have. Unlike other games, it’s not an incremental increase on multiplier.
